we are LUCKY. we have a fantastic wild raspberry bush in our backyard that has gone gonzo this year. we have put up 72 jars of jam and certainly don’t need anymore. so what to do with remaining abundance of berries??? make a raspberry pie of course! while our move to vermont has crippled our economic growth {read, no jobs for designers here} we are now able to eat like royalty thanks to our backyard bounty because in no possible world would we be spending $80 dollars on pie ingredients. this pie was the result of 14 cups of berries and 1.5 pie crust recipes. and it was delicious. there were six of us at dinner on saturday, and between us, we couldn’t even get through 1/2 of it. thus, even after giving away chunks of it, we are still having pie for breakfast…delicious & huge pie!
